Ingredients
- 1 cup whole cucumber, grated (with peel)
- 1 1/2 cups plain Greek yogurt (I use Chobani)
- 2 Tbs extra virgin olive oil
- 2 Tbs of fresh dill, chopped
- 2 garlic cloves, minced
- 2 Tbs lemon juice
- 1 tsp kosher salt
- 1/4 tsp ground pepper
Instructions
- Stir together cucumber, yogurt, olive oil, dill, garlic and lemon juice
- Season with salt and pepper to your liking (taste before serving!)
- Chill the tzatziki in your fridge for a minimum of 1 hour before serving
- When ready to serve, garnish with fresh dill and any grated cucumber
