Easy Tzatziki Recipe

Ingredients

  • 1 cup whole cucumber, grated (with peel)
  • 1 1/2 cups plain Greek yogurt (I use Chobani)
  • 2 Tbs extra virgin olive oil
  • 2 Tbs of fresh dill, chopped
  • 2 garlic cloves, minced
  • 2 Tbs lemon juice
  • 1 tsp kosher salt
  • 1/4 tsp ground pepper

Instructions

  1. Stir together cucumber, yogurt, olive oil, dill, garlic and lemon juice
  2. Season with salt and pepper to your liking (taste before serving!)
  3. Chill the tzatziki in your fridge for a minimum of 1 hour before serving
  4. When ready to serve, garnish with fresh dill and any grated cucumber
