Ingredients
- 2–4 avocados, depending on size*
- 1/2 large cucumber, diced
- 1 red onion, minced
- 1 orange bell pepper, diced
- 3 Tbs of lemon juice
- kosher salt
- fresh ground pepper
- 2 Tbs of hummus (I used an avocado hummus from Cedar’s)
- lemon wedges for serving
*I have never seen avocados as big as they are here in Puerto Rico – they’re massive!
Instructions
- Slice avocados in half, remove and discard pits
- In a large bowl add cucumber, onion, bell pepper and hummus; stir until evenly coated
- Add a pinch of kosher salt, fresh ground pepper and lemon juice; stir once more
- Distribute filling into avocados, and serve with lemon wedges
