Stuffed Avocados

Avocado and toast has soared in popularity the past few years, which is no surprise considering how delicious the combo is. However, maybe it’s time to switch it up – let’s ditch the toast and stuff the ‘cado! Now before you start questioning my sanity in the decision to leave avocado toast in 2019, hear me out.

Stuffed avocados are: incredibly easy to make, gluten free, and are as delicious as they are beautiful. And on top of all that, there are so many health benefits that avocados offer, like:

  1. They contain more potassium than bananas
  2. They’re packed with heart-healthy fatty acids
  3. They’re delicious
  4. They can lower your cholesterol
  5. They’re packed with antioxidants

And the list goes on – seriously. And in all honesty, I guess if something were to become a trend in society, avocados are at last healthier than vaping. Some may argue avocados are healthier to ingest, yes, but are they healthy for the economy?

If you have no idea what I’m talking about, check out the docu-series on Netflix called Rotten. That’s a whole other debate to have later – not on this recipe. Why bring it up then? To remind everyone to be conscious of where your food comes from, and to find sustainable food sources.

What you need to make Stuffed Avocados

  • 2-4 avocados, depending on size*
  • 1/2 large cucumber, diced
  • 1 red onion, minced
  • 1 orange bell pepper, diced
  • 3 Tbs of lemon juice
  • kosher salt
  • fresh ground pepper
  • 2 Tbs of hummus (I used an avocado hummus from Cedar’s)
  • lemon wedges for serving

*I have never seen avocados as big as they are here in Puerto Rico – they’re massive! I put a normal sized lime beside one, just for scale…

How to make Stuffed Avocados

  1. Slice avocados in half, remove and discard pits
  2. In a large bowl add cucumber, onion, bell pepper and hummus; stir until evenly coated
  3. Add a pinch of kosher salt, fresh ground pepper and lemon juice; stir once more
  4. Distribute filling into avocados, and serve with lemon wedges
