Whelp, you know that saying “Mama’s always right”? It holds merit for this recipe! Which is excellent news for us ramen-making-newbies, and thank the Lord! I don’t think I could suffer another crappy-ramen blow to my ego. So buckle up betches, grab your slow cookers, your pork tenderloins and a bottle of wine, we’ve got ramen to make!

I made this dish shortly after we moved to Puerto Rico. As the majority of our kitchen things were still packed, I found my slow cooker (thank the Lord!). And between unpacking, no internet service and running errands, I needed to make something that would allow me to leave for the day, yet come home to a nice warm and yummy meal. I was craving curry, so I decided to make a Vegan Coconut Curry, and boy oh boy, was it ever a hit!

This recipe was a huge hit during quarantine. With a list of simple ingredients, and little effort to actually cooking (man, I love slow cookers), it was enjoyed for lunch AND dinner. It’s perfect for those days you’re 1) Too busy working from home, 2) Not in the mood to slave away for hours cooking, or 3) You just want to binge Tiger King and can’t be bothered fussing about dinner while trying to figure out who killed Carole Baskin’s husband.

At the end of the day, whatever your reasoning may be, this recipe is easy to whip up, leaving you with plenty of time on your hands for activities.

This Slow Cooker Tomato Quinoa Soup is the perfect, hearty, vegetarian soup; and the fact it take less than 15 minutes to prep, it’s a perfect meal for those busy days. When I wake up in the morning, I know the day will go about two ways: 1) I can’t wait to spend the day cooking and creating something for dinner, or 2) I have SO much work to get done, I need something easy and quick to make for dinner.
