What You Need to make Slow Cooker Chicken Pot Pie
- Chicken breasts
- Onion
- Garlic
- Sprig of fresh Rosemary
- Sprig of fresh Thyme
- Russet potatoes
- Frozen peas and carrots (1 package)
- Chicken broth (32oz)
- Flour
- Heavy cream
- Parsley
- Cornstarch *see notes
- Salt and pepper (to taste)
The list of ingredients isn’t too extravagant, so some of you may already have all the ingredients at home already. However, I would highly recommend not skipping out on the fresh Rosemary or Thyme – it really adds a beautiful herby depth and plus, it’s great for garnishing!
How to make Slow Cooker Chicken Pot Pie
In a slow cooker, place chicken breasts, onion, salt and pepper, garlic, thyme, rosemary, chicken broth, potatoes, and frozen peas and carrots. That’s it, it’s really that simple! Cook on high for 3 hours, then carefully (don’t burn yourself!) remove the chicken breasts from the slow cooker, and shred them. Now, before placing the shredded chicken back into the slow cooker, remove the herb sprigs and discard them (Rosemary and Thyme). Once they’re discarded, add shredded chicken back into slow cooker. In a mixing bowl, whisk flour and cream together until smooth; add into slow cooker, stirring to incorporate all ingredients.
Continue cooking on high for one hour. Now that’s one hour to cruise IG, watch Netflix or you can use this time to bake some biscuits! I’m a sucker for Pillsbury Biscuits – I could/can eat an entire pack to myself. You only live once, and I’m not about to start limiting my biscuit intake. Anywho! What I’m trying to get at is that during this hour, you can make biscuits, but it’s not required for a successful recipe. However, they’re delicious to dip into this Slow Cooker Chicken Pot Pie recipe.
After one hour has passed, it’s time to dive in! Grab a few soup bowls, scooping your delicious masterpiece into each; finish with a little fresh Parsley or Thyme garnish and enjoy!
