I want to start this recipe by discussing one of my favorite movies, Patch Adams (RIP Robin Williams). Now what does Patch Adams have to do with an Easy Tzatziki Recipe? Stick with me while I give a little context first. There’s scene in the movie where Williams’ character (a doctor) wheels out his patient (an adorable elderly lady) to a pool filled with noodles. Why in the world would there be a pool of noodles waiting for her? It was on her bucket list to ‘swim in a pool of noodles’ before she passed. For those of you who have no idea what I’m talking about, here’s the clip from the movie.
Now again, you’re probably asking yourself, what the heck does swimming in a pool of noodles have to do with this recipe? Whelp, on my bucket list before I die, I would like to swim in a pool of tzatziki. There. I said it. I’ve put it out in the universe. Did this article just take a really weird turn? Maybe. But after I saw that scene on Patch Adams, I knew what I was putting on my bucket list. Just imagine, a pool of tzatziki, with maybe a few floating dishes of veggies and OMG OMG a floaty made of PITA!
I just got way too excited over this idea.
I’ve mentioned this bucket list item to friends before, and after a puzzled and slightly confused look, it’s followed by silence. Possibly judgement, but most of the time the silence is because they’re imaging what they’d swim in before they died. Answers included: Chocolate, Tomato sauce, Zoodles, Jello, and a lot of people said Ranch.
What would your pool be filled with?
Anyways. Thank you for indulging in my swimming in tzatziki conversation. Now, on to the recipe!
Ingredients to make Easy Tzatziki Recipe
- 1 Cucumber
- Plain Greek yogurt (I use Chobani)
- Extra virgin live oil
- Fresh Dill
- Garlic
- 1 Lemon
- Kosher Salt and Pepper
Side note: You’ll notice (if you look close enough) that the bowl the tzatziki is in, is lined with a plastic film (non-toxic!). Why might you ask? Well, in all honesty, I have very few bowls left that I can use (the others are all packed), and limited washing availability – so this made for incredibly easy use and cleanup. Life hack? Yep!
This tzatziki is incredibly easy make. All you need to do is mix the ingredients above into a bowl, chill, and serve. I’m serious, that’s it. And the best part? Any leftover tzatziki can last up to a week in your fridge. Meaning, you can use it throughout the entire week on tons of different dishes.
